Job description
The Hoxton, Charlottenburg (Berlin) – Event & Culinary Head Chef (m/f/d)
At The Hoxton, we believe the little details make the biggest difference, and great food is at the heart of every memorable experience. We’re looking for a passionate and creative Event & Culinary Head Chef to lead our culinary team, bring exciting food concepts to life and create unforgettable dining experiences for our guests.
Our first Hoxton in Germany is home to 234 bedrooms of varying sizes, a vibrant wintergarden featuring all-day dining, a lively lobby and bar, a streetside terrace, and The Apartment – our unique meetings and events concept.
Reporting to our Director of Food & Beverage, you’ll lead and develop our culinary team, oversee all back-of-house F&B operations, and drive menu creation across all venues, including meetings and events. Combining culinary creativity with strong operational and commercial skills, you’ll ensure exceptional food quality, smooth operations and memorable guest experiences while driving the business to achieve its budgeted KPIs.
More about us...
The Hoxton is a series of open-house hotels, each in a neighborhood that we love. Ever since we opened our first hotel in Shoreditch, we’ve never just been about offering a bed for the night. We want to be more than that: proving style doesn’t need to be sacrificed for good value and providing a place where guests can hang out alongside the locals and submerse themselves in the neighborhood with vibrant, welcoming public spaces.
What you’ll do…
- Create, execute, and produce top-notch food with a constant eye on the highest quality standards, presentation, and flavor, with an eye on industry trends and neighborhood demands.
- Leading an international and dynamic culinary team.
- Ensure budget goals are achieved with industry leading metrics, with a specific focus on food and labour costs.
- Run the day in and day out Culinary operations of the meeting and events space, the Charlotte’s & Room Service.
- Ensure the authenticity of our meals, products, and flavours to the spirit of the brand.
- Craft culinary creations for meeting and events operations that continuously evolve and progress and which sets us apart from the competition.
- Collaborate with our GME team, F&B operations and the Culinary Teams to ensure every event is a success!
- Join in for guest site inspections and event consultations together with the GME team to give culinary advice.
- Attend weekly BEO meetings to ensure guarantees, quantities and food products are correct.
- Supervise the preparation of dishes for meeting & events, ensuring each culinary standard is met from dietary restrictions to H&S and maintain consistency in quality and taste.
- Make sure things are running without hitch, orders and deliveries are coming and going as needed, our service is smooth as chipotle butter, and our food hygiene standards are sky-high.
- Manage the orderings and receiving’s from all ingredients needed and maintain the adaco ordering system
- Perform regular inventory checks to replenish stock and optimize your inventory levels to minimize food waste and control costs.
- Work with the Culinary Team on ideas and techniques that make our kitchen a creative, ever-changing environment where we’re always looking to make the best food out there.
- Think outside the box and drive standards, always striving to find efficient solutions whilst maintaining the quality and integrity of the menu.
- Both guest and team experience will be at the heart of all you do. You’ll lead your team by example, keeping them involved and motivated; helping them feel empowered and supported, confident in providing top Hox experiences for our guests and comfortable turning to you with questions.
What we are looking for…
- 2+ years’ experience as a Banquet Chef or Executive Sous Chef, in a busy, bustling, multi venue environment with freshness and provenance of ingredients as a key priority.
- Ability to work AM or PM shifts, weekends and holidays.
- German speaker as interaction with the meeting planners and guests is necessary.
- Strong experience in Meetings & Events service.
- Highly skilled with multiple styles and cooking techniques with knowledge of both international and domestic dishes.
- Proven track record managing large volume kitchens and multiple concepts.
- Ability to resolve conflicts with employees, supervisors and guests.
- A true passion for creativity whilst maintaining the integrity of our brand standards through the dishes on the menu.
- Managerial skills to achieve budgeted KPI’s in labour and COS%.
- Managing the H&S within the kitchen spaces and all food handling, as well health code standards
- You’re looking for a place where you can be you; no clones in chef whites here.
- Passion for hospitality – you’re all about creating memorable experiences for others, be they guests or colleagues.
- You’re not precious. We leave our egos at the door and help get things done.
- You’re up for doing things differently and trying (almost) everything once.
- You want to be part of a team that works hard, supports each other and has fun along the way.
What’s in it for you…
- A competitive package, plenty of opportunity for development and rewards for going the extra mile and living our values.
- 28 holidays (plus bank holidays) and extra time off to volunteer with one of our partner charities.
