Junior Sous Chef

Pullman & Mercure King George Square is a vibrant 438 room twin towered hotel which acts as a sanctuary for leisure and business travellers as well as a place to be with our external facing venues including Goldfinch Restaurant and Street Café, Sixteen Antlers Rooftop Bar as well as internal facing KG Sports Bar. 

Located opposite King George Square, City Hall and ideally situated in the heart of Brisbane CBD the hotel has some of the largest conference spaces in Brisbane incorporating 2 ballrooms.

Reporting to the Chef de Cuisine the role of Junior Sous Chef will oversee the operation of all the F&B outlets as well as champion the guest and employee experience. Our kitchen brigade is responsible for providing exceptional food service, as well as providing friendly and knowledgeable service to all visitors.

The Junior Sous Chef will assist in leading a passionate team to deliver exceptional culinary experiences, every time.

What the role is all about:  

• While focused on Goldfinch restaurant you will support other key areas of culinary as required
• Supervise food preparation, cooking, and plating.
• Ensure timely service and coordination with front-of-house staff.
• Maintain high presentation standards and adherence to dietary and allergy accommodations.
• Monitor portion control and waste management to maintain food cost efficiency.
• Assist in inventory management, ordering, and receiving of ingredients.
• Ensure compliance with budgetary guidelines and operational efficiency
• Enforce proper food handling, storage, and sanitation practices.
• Ensure compliance with all health and safety regulations.
• Oversee cleanliness and maintenance of the kitchen equipment and workspaces

Qualifications

We're looking for a passionate Chef to bring their skill & knowledge, together with an outstanding energy to our hotel. The ideal candidate will possess the following:

• Culinary degree or relevant trade certification.
• Strong culinary skills with expertise in ala carte and banquet operations.
• Ability to lead, train, and manage a diverse kitchen team.
• Excellent organizational and time management abilities.
• Knowledge of food safety, sanitation, and health regulations.
• Ability to work flexible hours, including evenings, weekends, and holidays as needed.
